We aim for time spent at Hospitalfield to act as a step change in the evolution of an artist’s work.
The residency programme at Hospitalfield provides opportunities for visual artists, filmmakers, writers and other cultural practitioners to focus on the development of a specific idea, project or the development of new work.
It is a context in which participants can work independently or collaboratively. Selectors are looking for applicants that can demonstrate clearly what their project or focus for the residency will be.
Please note that currently:-
- The funded residency programmes are devised for those developing their working lives within the scope of contemporary visual art practice.
- The Interdisciplinary Programme is a programme that welcomes applications from a wide range of cultural practitioners.
- The Graduate programme invites applications from art courses.
- We work with partners to devise and run other specialist residency programmes throughout the year.
Applications are invited from artists who have a specific project or period of work to focus on and for whom this time will be invaluable. We expect that applicants will have had a formal training or similar and will be developing projects and new work for public exhibition or developing their research with some form of future public outcome in mind. The programmes are structured for individuals working at a range of points in their career. Each has a specific focus, the Interdisciplinary Programme for example aiming to cultivate a group which has the broadest range of practices. Selectors will consider the application statements with care and in accordance with the aims of each of the programmes. We do not expect to do interviews so will select from the applications.
Participants in the programme live and work in the house, studios, gardens and courtyards of the estate. The location overlooking the North Sea gives a feeling of isolation and is an extremely peaceful place to work however, once off the threshold of the estate the reality is that Hospitalfield is a part of the small fishing town of Arbroath and within walking distance of useful amenities. Arbroath station is on the east coast train line running from London to Aberdeen and the direct trains to all of the main Scottish cities. The long daylight hours in the spring and summer, beautiful coast line and high percentage of sunshine hours defines this part of Scotland.
Selectors for the residency programmes at Hospitalfield are looking for applicants that can demonstrate clearly what their project or focus for the residency is and what they anticipate the potential that this setting will offer them and the progression of their work.

Hospitalfield is one of Scotland’s most fascinating 19th century Arts & Crafts houses, situated in the coastal town of Arbroath. The estate is built on the site of a medieval hospital, the 19th century buildings that we see today are the vision of the artist Patrick Allan Fraser (1813-1890), who left his house and estate in Trust to support artists and learning in the arts and crafts.
Hospitalfield is an arts organisation with a public programme which attracts visitors from far and wide. We run a programme of national and international artist residencies and a café in the beautiful walled gardens. We run a catering business attracting events, parties, some small weddings and use the residential facilities to generate income to support the work of the charity.
The organisation is a charitable trust with a trading arm. The Trust is in a period of growth and change as we invest in the buildings and make Hospitalfield a destination for local visitors as well as those visiting the region.
The Head Chef will be an important member of the team who is interested in engaging with the arts programme and working with the wider team. Hospitality is a vital aspect of all our activities and this team working is incredibly important to the success of the vision for Hospitalfield.
The kitchen is central to all activities with the growth of the café and its reputation for good, simple, local food, inspired by its location in the garden, leading the profile of the catering offer.

Applicants should have demonstrable experience of working in a similar busy café/restaurant environment including event catering for up to 80 people. We are looking for someone who is excellent at creative cooking with strong management skills who can provide warm and welcoming customer service for all.
If you are interested in gardening and the potential of what the garden can provide for the plate, then this is all the better.
You will be managing a small team of kitchen staff and so an approachable manner and team building attitude would work best. You will need to be computer literate.
The Responsibilities of the Head Chef at Hospitalfield:
- Producing fresh, creative, quality food from scratch
- Working with the Hospitality Manager and Director to ensure that the business is meeting its income targets, contributing ideas and delivering events where we need to pivot and innovate to meet income targets.
- Creating menus inspired by the produce grown in the garden and at the local HOPE nursery garden but also as much local produce as is realistic.
- The kitchen team is small, it will be the Head Chefs role to manage the kitchen staff.
- Working with senior management team to plan and deliver hospitality across the programme – this includes attending weekly briefings/diary meetings
- Interacting with all those who we cater for, so building a hospitable rapport with customers including the residents living for short periods in the house to ensure they have a great food experience while they are here, and that their dietary requirements are catered for.
- Maintaining profit margins on food and minimising food waste
- Stock control, orders and related administration.
- Ensuring strict food hygiene practices and maintaining our great relationship with the EHO.
- Meeting with clients to discuss their menu requirements for events.
- Maintenance of the kitchen and equipment
Driving license and own transport will be required if not living in Arbroath.
Notes on Hours:
The hours will have seasonal variations and also variations of working times as there will be some event work outside of the opening hours of the café and meal times of the residents. Therefore, we require someone who can be flexible around these needs.
